Commis Chef- Banqueting
As a Commis Chef within the Events & Weddings team at Castle Leslie Estate, you play a key role in supporting the delivery of exceptional, high‑quality dining experiences for our wedding couples, their guests, and all special event clients. Working under the guidance of our senior chefs, you assist in the preparation, cooking, and presentation of dishes for banquets, canapé receptions, private dining, and large‑scale celebrations.
Your responsibilities include maintaining high standards of mise en place, following dish specifications consistently, and ensuring all food is prepared in line with our culinary guidelines and hygiene regulations. You support the smooth running of the kitchen during busy service periods, particularly on high‑volume wedding days where timing, organisation, and teamwork are essential.

Commis Chef:
In this role, you contribute to menu execution for multi‑course banquets, assist with plating during service, and help manage storage, stock rotation, and cleanliness within your assigned section. You collaborate closely with the wider culinary and events teams to ensure seamless coordination between kitchen output and event schedules.
Ultimately, your work supports Castle Leslie Estate’s reputation for delivering memorable, elegant, and beautifully crafted culinary experiences that enhance every event and wedding hosted on the estate.
